CNY's Orange Yogurt Cheesecake
Base:
7' thin round cream cracker base. Finely crushed about 80g of cream cracker add and mix well with 50g melted butter. Press mixture onto bottom of 7" spring pan and refrigerate for 15 minute or until film.
Cheese filing:
(A) 250 cream cheese. 25 g sugar, 25 g butter
(B) 25 g flour
(C) 2 egg yolks
(D) 75g yogurt
(E) 2 egg whites, 35 g sugar, pinch of salt
Methods :
- Cream (A) till light and fluffy.
- Add (B) and mix till well blended.
- Add (C) and cream till smooth.
- Add (D) and mix till well combined.
- Whip (E) till stiff. Mix with the cheese mixture till well incorporated.
- Place the cheese mixture on top of base. Bake at 160'c in water bath for 60 minutes.

It is Chinese New Year Eve today, we cannot celebrate this year with our dear family as we are aboard. I miss mom n family badly. I then decided to bake this cake. I am not really satisfy with the outcome as the oven is not out of normal function. However, it is still delicious, the recipe is based on Chef Alex Goh.
Valentine's Avocado Cheese Cake
Crystal says,
The ingredient and methods are same as CNY orange yogurt cheesecake, I added avocado since my yogurt has left 50g only :p The most satisfaction is that the kids ate the avocado without knowing it and enjoying it, plus my dear hubby brought me a rose after work.
The Sponge cake
Ingredients:
4 eggs
120 g Castor sugar
1/4 tsp vanilla extract
110 g plain flour
70g melted butter ( must be hot when added to batter)
Methods :
- Whisk egg yolks till smooth. Add 20g sugar and vanilla, continue whisking until yolks puff up and the colour turns very pale ( about 2 minutes).
- Whisk egg whites until soft peaks. Add remaining 100g sugar and whisk until stiff peak.
- Fold egg whites and yolks by using spatula.
- Sieve in flour and fold it gently. Add in hot melted butter and fold in gently and quickly.
- Pour into 8 inch round pan and bake at 190"c for 30 minutes.

This is my first time to bake a sponge cake, I find this highly recommended recipe, again from Alex Goh. I have last minute call to visit my new friend from HK, so I decided to make this handy sponge cake. I am so blessing that sponge cake is her son favourite and I just have 4 eggs sitting in my kitchen.
